My first weekend off and I immediately slip back into old eating habits :( But now its Monday again and I'm back on track! I did great all week; its so much easier to eat healthy on the days I work out. I find that I just don't feel like eating crap. I actually crave healthier foods. I have eaten so many vegetables that my poor belly is in an uproar trying to get used to it. Also, I am on a quest to find healthy recipes ASAP because I'm getting sick of grilled chicken and big salads real quick.
I need carbs... "good" carbs... if there is such a thing. Whole wheat pasta? But I hate whole wheat pasta. It has no flavor, gross texture and reminds me of cooked cardboard. I decided to cook it and force it down anyway. I was going to try to hide the flavor with marinara. I cut up a green pepper and some mushrooms and opened the jar of moldy sauce in the fridge. Yup. Moldy. Gross. But there was an unopened jar of salsa. So I cooked the jar of salsa on the stove and added veggies. Poured the salsa veggie sauce over thin spaghetti (whole wheat) ... and it was AWESOME. A little spicy. Spicy enough to cover the taste of whole wheat pasta. Loved it. Super easy, too. Here's my recipe:
Whole Wheat Pasta with Salsa Veggie Sauce
Ingredients:
1 big jar of salsa (I like hot salsa)
Any veggies (peppers, onions, mushrooms, tomato, can of corn? whatever)
1 box whole wheat thin spaghetti
Cook pasta according to directions on box. Be careful not to overcook. No one likes mushy pasta.
Chop up all your veggies. In a frying pan over medium heat, cook veggies in salsa for about 10 minutes.
Pour over pasta.
Need more protein? Add some chicken or a can of blackbeans.
